When I found myself with a surplus of eggs and a craving for sweets, I decided to do some baking because calories don’t count over the holidays, right? These lemon bars are super easy to make from scratch and don’t require a lot of skill to make them which is a major plus in my life. These bars make a tasty dessert, snack, or even breakfast— no judgement 😉
3/4 cup oil OR 1 cup of melted butter (I usually use oil instead of butter since it’s cheaper)
1/2 cup white sugar
2 cups flour
Ingredients (Lemon Filling)
1 1/2 cups white sugar
1/4 cup flour
2 lemons (to be juiced and zested)
Powdered sugar (optional)
Preheat oven to 350 degrees F.
Start to prepare the crust by mixing oil, flour, sugar until crumbs form. Spread all over baking dish, pat mixture down with a fork. Bake for 15-20 minutes until golden/mixture is firm. Let cool.
Prepare the filling by adding dry ingredients (sugar and flour), then wet (juice of 2 lemons and eggs). Mix in about 2 tablespoons of lemon zest (if desired). Pour over crust. Bake for an additional 20 minutes, let cool (as it cools, the mixture will set), then dust with powered sugar and cut into squares (or just grab a fork and dig in!).
