Coming back from a mini Portland getaway, I’m back to my healthy-ish eating habits. I tend to watch what I eat during the week but take a no hold barred approach on weekends—I mean, calories don’t count on weekends, right?!?!?
Of course, I take exceptions on vacation and oh boy did I EAT (and eat…and eat) on my trip to Portland and weight gain was inevitable (now wearing leggings as pants…should I be ashamed?). I’m working on a travel guide to showcase my fave spots around the town but I’m exhausted and caught a nasty cold so who knows when that will see the light of day? But other than drinking plenty of water and tea, I’m going to be turning to one of my favorite juices to help me slim down to my pre-“burgers and cocktails and dessert after every meal” body. Starting with this refreshing watermelon smoothie-slush hybrid that tastes like a refreshingly healthier version of a slushy or icee from gas stations.
Having downed a significant amount of alcohol, hydration is key and since watermelon is obviously filled with water (hence the name), it’s already doing my body a favor simply by me drinking it. In addition to watermelon being super delicious, there’s also tons of body+beauty benefits in watermelon—from cancer prevention, antioxidants, vitamins (A, B6, and C) and it’s low in calories. Sure, I could buy a designer freshly pressed juice for $10/8 oz. bottle but this watermelon slush drink is super easy to make. AND BONUS! For those who aren’t looking to detox—you can add the hard (clear) alcohol of your choice.
1 Watermelon, cut in half
1-2 cups of Ice
1/2 cup of water (or more if you don’t mind it extra diluted)
Vodka (optional, to taste)
Step 1. Cut watermelon into cubes. Fill blender accordingly. Add ice and water.
Step 2. Blend together. Pour over ice if that floats your boat or just sip as is!
Enjoy throughout the day or enjoy as use as a sweet snack for when the junk food cravings kick in (my body takes a few days to get out of vacation eating mode).
